MATHIAS DAHLGREN: TWO EXPERIENCES ONE PHILOSOPHY


Mathias Dahlgren’s twin restaurant concept in Stockholm’s Grand Hotel provides diners with a trendy informal “Food Bar” in the Matbaren, or the more formal dining room of the “Matsalen”. Mathias’s natural cuisine is based on childhood memories and national culinary heritage, and has, according to the New York Times, raised the bar in a city with no shortage of beautiful dining rooms.

Chef Patron Mathias Dahlgren has been one of the best chefs in Sweden for many years. He comes from the northern parts of Sweden, from Umeå, and won the Bocuse d’Or 1997. Today Mathias Dahlgren has two Michelin stars for his Matsalen and one Michelin star for his Matbaren, but before that he also had one star for his former Bon Lloc. His passion for the Swedish cuisine is never to be mistaken and his reliance on the best ingredients that mostly are local most often results in some of the best Nordic cuisine.

The chef’s attention to light and fresh natural flavours is a dream for your senses and completely different compared to many other traditional cuisines like the French. Mathias Dahlgren’s creative side comes out in full bloom at his Matsalen and you never know what is coming next when you are having his tasting menu. The menu is changed on a seasonal basis, but you can expect to have the signature Scandinavian Sashimi early during dinner. It is delicious and will hopefully always stay on the meny in one or another form. Depending on the season another typical dish can be the sea canker from the West coast of Sweden (Bohuslän) with broth on king crab.
