We have already provided to write about the Japanese Henteco bakery in our magazine here. But as Japan is so far and their cool biscuits are not available everywere, we have tryed to make at home the Henteco’s squirrel biscuit, and the result was quite good. Here below we give you a standard recipe for biscuits, but for all the rest, you have to provide by yourself. Once you make the dough, just follow step by step the pictures below, then bake the squirrels for 20 minutes at 180°C ( 356 °F).
Ingredients:
– 250g butter
– 140g sugar
– 1 egg yolk
– 2 tsp vanilla extract
– 300g plain flour
– 2 sp cocoa powder
Method: Mix 250g softened butter and 140g caster sugar in a large bowl with a wooden spoon, then add 1 egg yolk and 2 tsp vanilla extract and briefly beat to combine. Sift over 300g plain flour and stir until the mixture is well combined – you might need to get your hands in at the end to give everything a really good mix and press the dough together. Divide the dough in two parts and color one part usinf the two spoons of cocoa powder.
