I was never a big breakfast eater. Not to say I didn’t eat breakfast, i just didn’t like breakfast foods. Correction, cinamon rolls have ALWAYS been very well received. But are they really a breakfast food? Those suckers have more fat and sugar then a slice of cake…but I digress. Eggs, eggs were especially gross to me as a kid, teenager and even into my early 20′s. It wasn’t until I was around 22 that I finally started t like, no LOVE eggs. It was weird, like one day my taste-buds put on their big girl pants and grew up. Bacon on the other hand, I don’t recall ever disliking bacon. But I was picky about how I liked it. Dude, I was the pickiest eater, EVER. I’m embarrassed about how picky I used to be. Pretty much I only ate carbs, hence the love for cinnamon rolls…again, I digress. I liked my bacon soft, under done. Cooked yes, but not crispy, no burnt parts or else it wasn’t making its way into my digestive system. I outgrew that too and realized “it’s bacon, which means it tastes good no matter how its cooked.” So 10 years ago I would not have liked these bacon and egg cups, mainly because of the egg. But now, yum yum yum. I can eat up and entire batch. These are SOOO easy and are very impressive to serve to guests. They make a perfect brunch item. Or shoot, even a great dinner item. in fact, I made these for dinner one night, we had breakfast for dinner and these were perfect! Supplies/Ingredients (12 cups): 12 slices bacon; 8 eggs; 1/2 cup shredded cheddar cheese; pinch of salt and 1/4 tsp black pepper. Preheat oven to 350 degrees. Whip the eggs, salt, pepper and cheese with a fork. Spray non stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup. Fill each bacon lined muffin cup 3/4 of the way with the egg mixture. Bake for 30-35 minutes, until the egg cups are golden brown and don’t jiggle. Use a knife to scoop them out of the tins. Serve immediately. Each cup is about 100 calories. So you can eat a few of them for breakfast and not feel guilty about eating TOO much junk, but you still get some tasty bacon! ( 5elected from )
